Goal

Is it possible to hide certain metadata field(s) globally for all folders/new check in except for specific WebDav/Contribution folders?

This is possible through configuration manager via the rules feature. The below solution will outline steps to create a global rule with conditions to hide the metadata except for the specific folders defined by the sysadmin. This rule works because the folder is referenced as an xcollectionID value within the condition clause under rules. This also means that the rule will not propagate down to its subfolders. You will have to create a separate condition for each folder that you want the metadata field to appear in. Please also be aware that this will affect standard new check in's too.
