 When the customer select's a value from the dropdown, tabs away from the field, does not update the record and wants to remove the selection, they are  unable to do so. This has nothing to do with referential integrity. What is missing is functionality that allows the customer to change their mind and undo a value that they have put in. Especially for optional user data fields, the customer should be able to change their mind before the data is saved and the application should provide a means to do that.
