How To Create Sales Stage Duration Report On Opportunities

We would like to obtain Metrics on the amount of time it takes to go through our Sales Stages contained in Sales Methods. How can we find/use behind the scene time/date stamping as an Opportunity goes through the defined Sales Stages? If we see them, then we can review average times it takes for the Opportunity cycle and also look at the variation within Sales Stages.

Here's an example of the type of data I'm looking for on an Opportunity:
