Currently on Lead edit, the standard field "Response Channel" does not support users changing the picklist from a value to NULL. If the users select a value by mistake they dont have an option to then update this back to NULL. This is different from other picklists in the system and is no consistent across the application. If you use the Rank field as an example, this can be updated from a value back to null at any time.
