Unable to Select Currencies for the Profile Option - DOO_DISPLAY_CURRENCY

When attempting to populate a value in profile option - DOO_DISPLAY_CURRENCY - there are no values in the LOV.
The issue can be reproduced by executing the following steps:
1. Navigate to Setup and Maintenance (FSM)
2. Search for and Select the task - Manage Administrator Profile Values
3. Search for Profile Option Code - DOO_DISPLAY_CURRENCY
