Can I enter an override e-mail address in test instances to prevent customers from receiving e-mail?

For collections we have set up many customers with an e-mail address for dunning purposes. When we do a production-to-test clone, we don't want the customers to receive dunning letters from our test instances.

Is there a global override address or other setting that we can set to prevent sending dunning letters from test instances to customers?
