Change Booting Kernel From UEK to RHCK on OL 7.X IaaS Compute Instances (Doc ID 2248303.1)

Goal

By default the IaaS Compute instances created based on the OL 7.X templates / images supplied by Oracle will boot into the UEK kernel (for example OL7.2 boots using the UEK R3 kernel).
This article explains what needs to be done in order to switch to the RHCK kernel and ensure the VM will further boot correctly after the change.
