Discrepancies Observed In The Format Of Date Columns In Export Files

We need to send data extracts for Accounts, Lead, Opportunity, Contact, Product, Employee Resource,etc to data warehouse. As per their data architecture, they need the date columns to be having a specific format.
Expected formats are as below:-
2. YYYY- M-DD
3. DD.MM.YYYY and a few others.
On a sampling basis, we tried taking extracts by selecting the available format from the Date format drop down. On setting it to YYYY-MM-DD from the drop down, the generated extract contained data in the format M/DD/YYYY. Not only are the parameters represented in a different format but also the separators are not the same. Instead of "-", "/" is present in the data extract. This occurs in the case of other options available within that drop down too.
