Workflow Notifications Are Coming With the Wrong Date

Please kindly advice why user received notification as per the workflow notification action on Jan 27 while the Completion Date is not on Jan 30 ?
Explanation of the situation
The workflow that triggers the notification has a Wait action before of the email notification action and the wait is se to exists until 3 days of the Completion Date.
In other words, with 3 days until the Completion Date the owner of the Opportunity is supposed to receive the email notification as per workflow.
The situation that needs to be answered is why the owner of the Opportunity did received the email notification on Jan 27 even if the Completion Date is not Jan 30, but a different date ?!
