Date Picker Data Element With The Formula "Today Date/Time" Showing Incorrect Data

When adding a Date Picker Data Element with the formula Today Date/Time, the actual time populated into the Data Element (DE) is off by several hours.
Per the documentation it should be as follows:
A date field: A single read-only value—Today Date/Time. This means the Destination Element will be populated with the current server date and time.
In this case, when the user created the record the time on their computer was 10:33 AM, but the time in the Date Picker DE was 05:33 AM.
The server time was 15:33 PM, so the time was rather random and wasn't what was expected per the definition of the DE.
