Incorrect Taxonomy Responses In Content Delivery REST API

Symptoms
We've discovered an issue with the responses from the Content Delivery REST API. Both REST and GraphQL responses are returning with the unexpected detail for the queried taxonomies. However, the Content Management and Preview REST APIs are providing the correct information.
Let's look at a couple of examples to clarify:
Example 1:
Asset ID: COREA387E484C3DE4822AE196175DC5D0DD7
Issue: It doesn’t display all the categories it should. We're only getting a partial list.
