UPK: How to Modify 12.1 KCenter Content Root for Anonymous Tracking

In UPK Professional 11.1 ESP 2, we were able to separate 'authentication' on Content Root folder and KCenter.  The content root could be set to 'anonymous' to track content by module, section and topic for the outline used in IAS and not present the End User with an authentication window.

If Anonymous tracking was *not* selected during 12.1. KCenter installation, how can the content root be converted from Windows Authentication to Anonymous tracking after installation?
