This problem can occur on any platform.
A Task Type defined in the Task Setup form is not available in certain forms. (i.e. Service Request - Tasks Tab)
(N) Service Requests > Create Service Requests
- Tasks tab.
You might be able to set a default in the profile settings and a given Task Type appears in the 'Task' tab, but you still can not change the Task Type using the List of Values.
