HR Lookup table created with 'Access Level' equal to 'System' instead of user, how can we modify this?

We have 2 lookup tables being used in our PROD environment that were created with an Access Level of System instead of User. The impact of this is that the lookup table cannot be updated by anyone other than the person who created it. Since the creator is a consultant, we need to resolve this before they leave and we have no way to update the lookup table.
