ElasticSearch - understanding search possibilities

We've recently upgrade to PeopleTools 8.56.05 and wanted to start taking advantage of some of the search capabilities available with ElasticSearch. We've deployed/crawled the Portal Registry search, which appears to be working as expected. However, we're curious if we can define other search definitions that will allow us to search the following:

Search link names that are available on pagelets
Search external (Authoria-developed) User Training Guides and FAQ documentation
Search other external documentation (in PDF, Excel, Work, PowerPoint format) on the web server or app server
Search contents of Attachments stored in PeopleSoft
Search other text stored in PeopleSoft LONG fields (e.g. Performance Evaluations, Resume text)
