Open UI - Picklist Dropdown Value of '-' (Hyphen/dash/minus sign) Cannot Be Selected

Symptoms
In Open UI, Picklist drop-down value consisting solely of a '-' (Hyphen/dash/minus sign) character is not clearly visible and cannot be selected.
STEPS
The standard LOV 'FS_ORDER_STATUS' has a Display Value of '-'
Navigate to Administration Data -> List of Values
Query for LOV record with
Type= FS_ORDER_STATUS
Display Value = -
1. Navigate to Service Order
2. Create/edit a service order.
3. Open Status picklist
4. The value "-" is not clearly visible(displayed as a menu delimiter instead of a menu item) and cannot be selected.
OR
1. Navigate to Administration - Data -> List Of Values
2. Create a new LOV record with
Type= QUOTE-STATUS
Display Value = -
Language-independent Code = -
3. Clear LOV cache
4. Navigate to Quotes List and create/edit a quote
5. Open Status picklist
6. The new LOV value '-' is not clearly visible(displayed as a menu delimiter instead of a menu item) and cannot be selected.
