What is the difference between adding an approver to a task using the Add Assignee button, versus the Adhoc Route button ? (Doc ID 2335908.1)

Goal

In BPM Worklist, when configuring a task, there are some options under Assignment and Routing Policy :-

 

 

And in BPM Worklist, when viewing a task, it is possible to invite additional particpants to the approval chain in one of two ways

History -> Add Assignee

or

Actions -> Adhoc Route

 

What is the difference between these ?
