Using a Symlink for JAVA_HOME Causes Unexpected Results

Symptoms
Reported system has Java installed at /path/to/jdk1 and a symlink pointing to that installation at /opt/software/java. The symlink is set as JAVA_HOME for WebLogic Server by running:
A new version of Java is subsequently installed at /path/to/jdk2 and the symlink is updated to point to the new version. However, WLST (and other WLS tools) are still using the original Java (from /path/to/jdk1) and not the new version.
