How to Modify Health Care Professional Drop Down List (Doc ID 2877768.1)

In the Case Form General Tab in the Reporter Information section, the field Health Care Professional has a drop down list:

When you activate the dropdown, it displays more options than you want.

For example, you don't want UNK to be displayed.

You navigate to the Flexible Code List Maintenance screen to mark 'UNK' to not display, Console > Code Lists > Flexible Data Re-categorization > Flexible Re-Categorization
but the system does not allow you to modify it directly from this screen.

How can one remove a value from Health Care Professional dropdown field on General > Reporter Information section?

Specifically, of the three options, Yes, No and Unk, could Unk be disabled?
