Oracle Linux: Server is Booting with Old Kernel Instead of New Kernel After Patching "GRUB menu is not showing the latest kernel while booting" (Doc ID 2725761.1)

Linux OS - Version Oracle Linux 7.8 with Unbreakable Enterprise Kernel [4.14.35] and later
Linux x86-64

Symptoms

Server has been installed with new kernel and rebooted but post reboot, server is still booting with old kernel by default. 

Old Kernel: 4.14.35-1902.6.6.el7uek.x86_64

New Kernel: 4.14.35-2025.400.9.1.el7uek.x86_64 

The following command shows old kernel post reboot of patching.
